Ingredients

1 tablespoon of Grated ginger

2 Garlic cloves

6 Tomatoes

1 kilogram of Potatoes

3 tablespoons of Oil

1 Onion

2 Green chilies

1 teaspoon of Black mustard seeds

2 tablespoons of Ground coriander

1 teaspoon of Turmeric

1 teaspoon of Ground cumin

2 teaspoons of Garam masala

1 tablespoon of Ground coriander

Preparation

Step 1 : First, combine the ginger, cilantro, garlic, and chopped, seedless tomatoes in a processor, blend for a few seconds, and set aside.

Step 2 : Next, boil the potatoes in water for 10 minutes, remove, drain, and set aside.

Step 3 : Then, in a skillet with hot oil over medium heat, add the onions, salt, and cook for 15 minutes.

Step 4 : Subsequently, add the chilies, mustard seeds, ground cilantro, turmeric, cumin, and garam masala, and cook for another 2 minutes.

Step 5 : Then, pour the tomato mixture into the skillet and cook on low heat.

Step 6 : Add the potatoes and the remaining tomatoes, season with salt and pepper, and cook for an additional 5 or 6 minutes.

Step 7 : Finally, serve the dish sprinkled with chopped cilantro on top.
