Chicken Vindaloo
Ingredients
1 cup of water
100 milliliters of chicken broth
1 teaspoon of cinnamon
1 tablespoon of black cardamom
1 teaspoon of chopped fresh chili
1 tablespoon of coriander powder
1 tablespoon of clove
1 tablespoon of cumin
2 chicken thighs
1 tablespoon of olive oil
1 tablespoon of salt
1 tablespoon of paprika
1 tablespoon of turmeric
1 teaspoon of garlic paste
1 teaspoon of grated ginger
2 potatoes
1 onion
1 tablespoon of vinegar
1 tablespoon of yogurt
Preparation
Step 1 : To prepare this recipe, start by peeling the potatoes and cutting them into cubes.
Step 2 : Next, heat some oil in a skillet and confit the potatoes on low heat.
Step 3 : In a larger pan, add oil and incorporate chopped chili, clove, cardamom, cinnamon, and cumin.
Step 4 : Cook everything while stirring, then add garlic and ginger, stirring with a spoon.
Step 5 : Next, add julienned onion and cook until it becomes transparent.
Step 6 : Lower the heat and add turmeric, paprika, coriander, and cumin.
Step 7 : Pour in the chicken broth and stir, cooking on low heat until the broth reduces.
Step 8 : In a separate skillet with oil, cook garlic, ginger, powdered spices, and chicken.
Step 9 : Sauté, stirring for 4 or 5 minutes, then add a splash of water and continue stirring for another 5 minutes.
Step 10 : Then, add two tablespoons of yogurt to the sofrito and mix, cooking for one minute.
Step 11 : Add another tablespoon of yogurt and vinegar, then place the chicken in the skillet with the sofrito, mixing well.
Step 12 : Add the confit potatoes to the skillet, cover, and cook for another 3 minutes.
