Kebab Kakori
Ingredients
2 cups of minced lamb meat
2 tablespoons of chopped papaya
2 cups of onion in slices
1 egg
100 grams of toasted chickpea flour
2 tablespoons of chopped cilantro leaves
1 tablespoon of garlic paste
1 tablespoon of ginger grated
2 chopped green chilies
1 teaspoon of ground black pepper
1 black cardamom
1 mace leaf
1 teaspoon of cumin seeds
1 teaspoon of ground nutmeg
2 teaspoons of ground cinnamon
4 garlic cloves
2 tablespoons of salt
1 teaspoon of chaat masala
1 tablespoon of oil
Preparation
Step 1 : To prepare the kebabs, start by peeling the onion and slicing it.
Step 2 : Then, cook the onion in a hot skillet with oil until it turns golden.
Step 3 : All ingredients, except for the oil, egg, and chickpea flour, are placed in a glass bowl and mixed.
Step 4 : Let the mixture rest for 4 or 5 hours, then process it until obtaining a smooth-textured paste.
Step 5 : Next, add the egg and chickpea flour, knead well, and cover the mixture with plastic wrap, refrigerating it for an hour.
Step 6 : After resting, remove the mixture from the fridge and proceed to assemble the kebabs on skewers.
Step 7 : Then, preheat the oven and cook the kebabs for 20 minutes, or grill them if preferred.
Step 8 : Once the kebabs are golden, remove excess oil and cook for an additional two minutes in the oven or on the grill.
Step 9 : Finally, sprinkle with chaat masala and serve with green chutney, lemon slices, and onion rings.
