Masala Dosa
Ingredients
3 cups of basmati rice
1 cup of yellow lentils
2 tablespoons of salt
1 tablespoon of oil
4 potatoes
2 onions
150 grams of peas
1 teaspoon of curry powder
1 teaspoon of chopped fresh cilantro
1 teaspoon of grated ginger
1 tablespoon of ground black pepper
3 garlic cloves
1 tablespoon of garam masala
Preparation
Step 1 : To prepare this recipe, start by cooking the rice in boiling salted water, then drain and let it rest for half a day until it cools.
Step 2 : Meanwhile, soak the lentils for eight hours or overnight, then drain the rice and lentils well.
Step 3 : Next, process the rice in a blender until it forms a paste, adding water gradually as needed.
Step 4 : Repeat the same process with the lentils.
Step 5 : Then, mix the rice with the lentils until you get a smooth paste, add salt, and let it ferment for 8 to 12 hours.
Step 6 : Afterward, mix this batter with a little water, making sure it’s not too liquid but slightly sticky.
Step 7 : Spread the batter and cook on both sides in a non-stick skillet, being careful not to burn it.
Step 8 : In another skillet, heat oil and cook finely chopped onions and garlic.
Step 9 : When translucent, add peas, potatoes, and spices.
Step 10 : Add hot water little by little as needed while cooking the filling.
Step 11 : Finally, fill the stretched batter with the prepared mixture, roll it up, and serve.
