Step 1 : To prepare fresh cheese, start by boiling the milk in a pot and gradually squeeze the lemon juice once the milk has boiled for the first time.

Step 2 : When the curdling begins, remove the whey, which can be saved for other recipes, and stir the mixture for 5 minutes.

Step 3 : Then, remove the pot from the heat.

Step 4 : Next, strain the mixture with a fine mesh or cloth, rinsing the strainer with water to eliminate any lemon flavor.

Step 5 : Once rinsed, squeeze the cloth well to remove excess water.

Step 6 : Afterward, wrap the cheese in a clean towel or cloth and let it rest by pressing it between two boards or plates for two hours.

Step 7 : Once this time has passed, cut the fresh cheese and it can be served alone, as part of a salad, or as a accompaniment in various preparations.
