Ingredients

1 onion

2 carrots

2 potatoes

8 asparagus

1 teaspoon of garam masala

1 teaspoon of curry powder

1 teaspoon of ground cumin

1 teaspoon of fresh grated ginger

1 tablespoon of salt

1 teaspoon of pepper

1 cup of vegetable broth

50 milliliters of olive oil

8 phyllo dough sheets

Preparation

Step 1 : To prepare the samosas, peel and chop the onions and carrots.

Step 2 : In a pot, heat the olive oil and cook the onions and carrots until tender.

Step 3 : Then, wash and cut the asparagus into equal parts, peel and cube the potatoes, and add them to the pot.

Step 4 : Cook for a few minutes and add the spices, making sure to mix all ingredients well.

Step 5 : Next, add the broth and cook over medium heat with the pot covered for 15 to 20 minutes, or until the potatoes are cooked.

Step 6 : Once the filling is ready, remove from heat and let it cool.

Step 7 : Cut the phyllo dough sheets into triangles, place the filling in the center of each, and seal to form the samosas.

Step 8 : Finally, brush the samosas with olive oil, place them on an oiled baking sheet, and bake in a preheated oven at 200°C for 15 to 20 minutes, or until golden.

Step 9 : Remove from the oven and serve.
