Ingredients
1 cup of semolina
2 tablespoons of oil
1 teaspoon of mustard seeds
5 curry leaves
2 green chilies
40 grams of ginger
2 onion
2 tomatoes
2 cups of hot water
1 teaspoon of turmeric
1 tablespoon of lime juice
1 tablespoon of chopped cilantro
Preparation
Step 1 : To prepare this dish, first heat a pan and toast the semolina for a few seconds, making sure to remove it before it browns and set aside in a container.
Step 2 : In the same hot pan, add a tablespoon of oil and introduce the mustard seeds, curry leaves, and green chilies.
Step 3 : Next, add the grated ginger and cook for one minute before incorporating the chopped onion, cooking until it becomes transparent.
Step 4 : Then add the tomatoes and cook for about 5 minutes.
Step 5 : Next, add hot water, turmeric, and salt, and let it cook until it starts to boil.
Step 6 : Add the toasted semolina and cook for an additional 6 or 7 minutes, until the mixture thickens.
Step 7 : Once done, remove from heat and squeeze lime juice over the mixture, stirring well.
Step 8 : Finally, serve hot, garnished with chopped cilantro on top of each portion.
