Ingredients

1 cup of water

100 milliliters of chicken broth

1 teaspoon of cinnamon

3 teaspoons of black cardamom

3 red chiles

2 teaspoons of coriander powder

2 cloves

2 teaspoons of cumin powder

2 chicken thighs

2 tablespoons of olive oil

2 tablespoons of salt

1 tablespoon of paprika

2 teaspoons of turmeric

1 teaspoon of garlic paste

1 teaspoon of ginger zest

2 potatoes

1 onion

3 tablespoons of vinegar

1 tablespoon of yogurt

Preparation

Step 1 : Peel and dice the potatoes into evenly sized cubes.

Step 2 : In a pan with oil over low heat, confit the potatoes.

Step 3 : In another large skillet with oil, add the sliced chiles, followed by cloves, cardamom, cinnamon, and cumin.

Step 4 : After 30 seconds, add the garlic and ginger paste, stirring constantly.

Step 5 : Add the julienned onion and cook until it becomes transparent.

Step 6 : Then, remove the whole spices and lower the heat to add turmeric, paprika, cilantro, and cumin.

Step 7 : Pour in the chicken broth and cook until the liquid reduces.

Step 8 : In another skillet with oil, garlic and ginger paste, heat and mix with the chicken thighs and ground spices.

Step 9 : Add water and cook on low heat.

Step 10 : Add two tablespoons of yogurt to the sauté, and after a minute, add one more tablespoon of yogurt and vinegar.

Step 11 : Mix well and add the chicken to the skillet with the sauté.

Step 12 : Once the potatoes are ready, add them to the chicken skillet and cook for about 5 more minutes.

Step 13 : Finally, remove from heat and serve.
