2 tablespoons of oil
2 teaspoons of cumin
1 chopped onion
8 chicken thighs
1 tablespoon of grated ginger
6 chopped garlic cloves
1 cubed eggplant
1 teaspoon of salt
1 teaspoon of ground black pepper
1 teaspoon of garam masala
2 teaspoons of ground coriander
1 teaspoon of cayenne
1 teaspoon of mustard
1 teaspoon of turmeric
1 cup of green lentils
2 cups of water
Preparation
Step 1 : In a saucepan, combine two teaspoons of ground coriander, one teaspoon of cumin, cayenne powder, mustard, and turmeric.
Step 2 : Then, add the lentils and cups of water.
Step 3 : Cook the mixture until it boils over high heat, then reduce to low heat and cook for an additional 20 minutes.
Step 4 : Remove from heat and mash the lentils.
Step 5 : In a separate skillet, heat oil and add chopped onion and cumin.
Step 6 : Mix and cook for 10 minutes.
Step 7 : Next, add the chicken, ginger, and cook for another 2 minutes.
Step 8 : Add the garlic, eggplants, salt, and pepper.
Step 9 : Cover the skillet and cook for 20 minutes.
Step 10 : Add the lentils to the skillet, cover, and cook for an additional 5 minutes.
Step 11 : Finally, remove from heat, sprinkle with garam masala, adjust the salt, and serve.
