Lamb Chops with Curry and Yogurt

Ingredients

8 lamb chops

1 cup of yogurt

1 onion

1 tablespoon of concentrated tomato paste

1 tablespoon of curry

1 lemon

100 milliliters of vegetable broth

1 tablespoon of chopped fresh cilantro

4 tablespoons of olive oil

1 cup of oil for frying

Preparation

Step 1 : Peel and chop the onion, then set aside.

Step 2 : Squeeze the lemon juice and set aside as well.

Step 3 : Heat two tablespoons of olive oil in a skillet and cook the onion until golden.

Step 4 : Add the curry, stir, and then add the tomato paste.

Step 5 : Next, add the lemon juice and continue stirring.

Step 6 : Add the broth and let cook for about 15 minutes.

Step 7 : Remove from heat and set aside.

Step 8 : Mix the preparation with the yogurt.

Step 9 : In another skillet with a bit of oil, sear the seasoned chops with salt and pepper.

Step 10 : Then remove the chops and set aside.

Step 11 : Marinated with curry, place the chops on a baking sheet and bake in a preheated oven at about 180°C.

Step 12 : Cook for approximately 15 to 20 minutes.

Step 13 : To serve, place the chops on a plate with Indian bread.

Step 14 : Add a spoonful of yogurt and chopped cilantro on top of each portion.
