Ingredients

1 kilogram of lamb

100 milliliters of oil

2 bay leaves

1 black cardamom pod

1 teaspoon of cinnamon stick

10 peppercorns

4 cloves

1 chopped onion

1 teaspoon of grated ginger

2 teaspoons of chopped garlic

1 green chili

1 teaspoon of salt

1 teaspoon of turmeric

2 teaspoons of ground coriander

1 teaspoon of cayenne pepper

1 teaspoon of garam masala

1 diced tomato

1 cup of yogurt

2 tablespoons of chopped cilantro

1 tablespoon of curry

Preparation

Step 1 : To prepare this exquisite dish, start by heating oil in a pot and adding bay leaves, cardamom, cinnamon, pepper, and cloves.

Step 2 : Once they start releasing aroma, add the chopped onion and sauté until golden, stirring constantly for about 15 minutes.

Step 3 : Next, add ginger, garlic, chili, and lamb meat to the preparation, seasoning with salt and pepper.

Step 4 : Continue cooking for about 20 more minutes, stirring and gradually adding water to maintain moisture.

Step 5 : Then, incorporate turmeric, ground coriander, cayenne, curry, and garam masala, mixing all the ingredients well.

Step 6 : Add the diced tomatoes and cook for another 5 or 6 minutes.

Step 7 : Finally, reduce the heat, beat the yogurt and gradually add it to the preparation, stirring constantly until the sauce thickens.

Step 8 : Once ready, serve the dish garnished with chopped cilantro.
