Ingredients

500 grams of skinless, boneless chicken

1 tablespoon of yogurt

1 tablespoon of garam masala

1 teaspoon of ground cumin

2 teaspoons of coriander powder

50 grams of concentrated tomato extract

3 peeled, seedless tomatoes

120 milliliters of coconut milk

8 black peppercorns

1 tablespoon of fresh grated ginger

1 teaspoon of chopped fresh cilantro

6 curry leaves

1 teaspoon of ground ginger

1 teaspoon of garlic powder

1 garlic clove

Preparation

Step 1 : To prepare this delicious dish, the first step is to cut the chicken into evenly sized cubes.

Step 2 : Then, combine all the spices in a bowl and mix well.

Step 3 : Set aside half of this spice mixture and reserve it.

Step 4 : Use one half of the spice mixture to blend with the yogurt and marinate the chicken with this mixture for 2 to 3 hours.

Step 5 : Next, fry the chicken in a skillet with hot oil until golden brown.

Step 6 : Then, prepare a paste with the tomato extract, tomatoes, chopped onion, chopped garlic, ground black pepper, and the other half of the reserved spice mixture.

Step 7 : Process all these ingredients together.

Step 8 : Add coconut milk to the skillet where you cooked the chicken, along with the tomato paste.

Step 9 : Let it cook over low heat until the liquids reduce and the chicken turns a reddish color.

Step 10 : Finally, serve the dish garnished with freshly chopped cilantro and grated ginger.

Step 11 : Traditionally, it is served with a bit of white rice.
