Ingredients

6 garlic cloves

1 tablespoon of grated ginger

2 tablespoons of vinegar

1 teaspoon of turmeric

2 teaspoons of cumin

1 teaspoon of ground chili

2 tablespoons of salt

2 kilograms of pork meat

1 tablespoon of tamarind pulp

1 cup of oil

1 cinnamon stick

5 cloves

4 cardamom pods

1 chopped onion

1 chopped red pepper

Preparation

Step 1 : In a large skillet, start by cooking the garlic and ginger.

Step 2 : Then add the vinegar, turmeric, cumin, ground chili, and salt.

Step 3 : Mix everything very well.

Step 4 : Place the pork in a bowl and add the previously mixed ingredients.

Step 5 : Cover the bowl and set aside for an hour.

Step 6 : In a container, place the tamarind with hot water.

Step 7 : Remove the tamarind pulp, add more hot water, mix, and strain to obtain a clear juice.

Step 8 : In a pan, heat oil with cinnamon, cloves, and cardamom over medium heat for about 5 minutes.

Step 9 : Then add the onion and cook until golden, about 5 more minutes.

Step 10 : Add the tamarind juice to the mixture and cook until it boils.

Step 11 : Reduce the heat, cover, and cook for approximately an hour and fifteen minutes.

Step 12 : Add the paprika and cook for an additional 7 minutes.

Step 13 : Serve the dish solo or accompanied by rice.
