Balusahi
Ingredients
1 cup of flour
1 teaspoon of salt
1 teaspoon of baking powder
1 teaspoon of baking soda
4 tablespoons of yogurt
100 milliliters of butter
1 cup of oil for frying
1 cup of sugar
150 milliliters of water
1 tablespoon of lemon juice
2 teaspoons of rose water
1 teaspoon of saffron strands
1 tablespoon of sliced almonds
1 tablespoon of sliced pistachios
4 rose petals
Preparation
Step 1 : In a bowl, mix the salt, sifted flour, baking powder, and lemon juice.
Step 2 : Then, add the cold butter and mix until achieving a sandy texture.
Step 3 : Next, incorporate the yogurt and form a delicate, soft dough, cover it, and set aside for half an hour.
Step 4 : To prepare the syrup, place sugar and water in a deep saucepan and boil for 5 minutes or until the desired consistency is reached.
Step 5 : Remove impurities, add saffron strands and rose water, lower the heat, and check if the syrup is ready to remove from the stove.
Step 6 : Then, divide the dough into equal portions and shape them into balls.
Step 7 : Indent the center of each ball with your index finger and fry them in a pan with hot oil.
Step 8 : Once removed from the heat, place them on containers with absorbent paper.
Step 9 : Dip each piece in the syrup and let them rest for half an hour.
Step 10 : Finally, remove from the container, decorate with saffron and rose petals, and serve.
