Then it is cooked in syrup with touches of lemon and cardamom.

Ingredients

1 kilogram of White pumpkin
2 teaspoons of Lime juice
3 cups of Sugar
2 tablespoons of Milk
2 tablespoons of Water
1 teaspoon of Lemon juice
3 Peeled and chopped green cardamoms
1 teaspoon of Gulab jal (rose water)

Step 1 : The pumpkin is peeled, seeds and fibers are removed, then cut into thick slices with cuts made across its surface.
Step 2 : The pumpkin slices are soaked in lime juice for 2 or 3 hours.
Step 3 : Then, they are cut into cubes and boiled in water until tender and transparent.
Step 4 : In a pan, heat one cup of sugar with three cups of water to make a syrup.
Step 5 : Add lemon juice and cardamom to the syrup.
Step 6 : Skim off the foam and keep the syrup.
Step 7 : The cooked pumpkin pieces are transferred to a container and mixed with the syrup.
Step 8 : Cook everything together for 5 minutes, then remove from heat.
Step 9 : Add rose water, mix well, and let it cool.
Step 10 : Once cooled, the pumpkin cubes are ready to serve.
