Ingredients

4 carrots

2 teaspoons of lemon juice

3 cups of chicken broth

1 tablespoon of fresh grated ginger

1 tablespoon of olive oil

1 teaspoon of ground cumin

1 tablespoon of curry powder

1 tablespoon of sugar

1 teaspoon of ground cinnamon

2 grams of pepper

2 tablespoons of chopped fresh cilantro

8 tablespoons of yogurt

1 onion

Preparation

Step 1 : Peel and chop the onion, while the carrots are peeled and cut into cubes.

Step 2 : Place half a tablespoon of oil in a pot over medium heat, then add the onion and ginger to cook for 3 or 4 minutes.

Step 3 : Next, add the other half tablespoon of oil and incorporate the cumin and curry, stirring well.

Step 4 : Cook for one more minute and add the carrots along with half of the broth.

Step 5 : Once it boils, cover and simmer on low heat for 20 minutes.

Step 6 : Then, remove the pot from the heat and let it rest for half an hour.

Step 7 : Afterward, blend the mixture and return it to low heat, adding the other half of the broth, cinnamon, sugar, and pepper.

Step 8 : Stir and cook for another 3 minutes.

Step 9 : Finally, remove from heat and add lemon juice, stirring well.

Step 10 : To serve, pour the soup into bowls and add two tablespoons of yogurt to each portion, along with chopped cilantro.
