Ingredients
1 kilogram of lamb
4 tablespoons of oil
2 onions
1 tablespoon of garlic paste
1 tablespoon of grated ginger
1 tablespoon of ground coriander
1 teaspoon of turmeric powder
3 tablespoons of flour
1 tablespoon of salt
3 tablespoons of nihari masala
1 tablespoon of ground cumin
2 tablespoons of fennel seeds
1 tablespoon of ginger powder
5 green cardamoms
1 teaspoon of cumin
4 cloves
1 bay leaf
1 cinnamon stick
8 black peppercorns
1 teaspoon of nutmeg zest
1 lime
1 tablespoon of chopped fresh cilantro
1 liter of water
Preparation
Step 1 : The recipe begins by peeling the onions and slicing them into julienne strips.
Step 2 : Next, heat the oil in a pot and sauté the onions.
Step 3 : Then, cut the lamb into pieces and add to the onions, along with the grated ginger, garlic, ground coriander, turmeric, and salt, mixing well.
Step 4 : Cook for 5 minutes.
Step 5 : Afterward, toast the nihari masala and add it to the pot along with a cinnamon stick and water.
Step 6 : Mix everything, cover and cook on low heat for 3 hours.
Step 7 : Then, mix the flour with half a cup of water and gradually add it to the preparation, cooking for another 15 minutes.
Step 8 : Finally, add lime juice to the mixture, mix well, and serve topped with chopped fresh cilantro.
