Ingredients

1 tablespoon of cumin

1 tablespoon of green cardamom

1 tablespoon of black cardamom

2 cups of vegetable broth

1 tablespoon of coriander powder

1 bay leaf

1 tablespoon of paprika

1 tablespoon of turmeric

2 tomatoes

100 grams of paneer

1 tablespoon of garlic paste

1 tablespoon of grated ginger

1 onion

70 grams of spinach

Preparation

Step 1 : To start, peel and chop the onion and dice the tomatoes.

Step 2 : In a skillet, sauté the onion along with the ginger and garlic paste until the onion becomes transparent.

Step 3 : Next, add half of the tomatoes and cook for an additional 5 minutes.

Step 4 : Incorporate paprika, turmeric, cumin, coriander, bay leaf, the cardamoms, and vegetable broth.

Step 5 : Lower the heat to the minimum and cook for 5 to 6 minutes.

Step 6 : Then, remove the skillet from heat and set aside.

Step 7 : In a pot with boiling water, blanch the spinach.

Step 8 : Once boiling, remove and immerse in a cup of ice water.

Step 9 : Next, transfer the spinach to a blender until you get a green cream.

Step 10 : Mix this cream with the reserved sauté and return it to the skillet to heat for another 5 minutes.

Step 11 : Add the paneer and the rest of the tomatoes to the preparation and serve.
