Shahi Paneer

Shahi paneer is a spiced vegetable stew, rich in cheese, a classic dish from northern India. Prepared with butter, spices, onion, garlic, ginger, ground cashews, broth, rose water, and fresh cilantro. A creamy and easy dish to make. A delight for the palate.

In a skillet, heat the butter and sauté the spices for approximately one minute.

Chop the onion and garlic, adding them to the spices in the skillet along with the grated ginger and chili.

Add the ground cashews, broth, rose water, salt, and sugar, cooking for 15 minutes.

Cut the cheese into cubes and add it, gradually thickening the preparation.

Once the desired consistency is reached, remove from heat and serve garnished with chopped fresh cilantro.

Ingredients

1 onion

3 garlic cloves

20 grams of ginger

1 green chili

1 cup of vegetable broth

3 tablespoons of cashews

1 ground red chili

1 teaspoon of ground turmeric

1 teaspoon of garam masala

1 teaspoon of saffron

2 tablespoons of rose water

1 teaspoon of sugar

1 teaspoon of salt

250 grams of paneer cheese

1 tablespoon of cilantro leaves

1 bay leaf

2 cloves

1 tablespoon of green cardamom seeds

1 tablespoon of black cardamom seeds

1 cinnamon stick

1 teaspoon of caraway seeds

2 tablespoons of butter

Preparation

Step 1 : In a skillet, heat the butter and sauté the spices for approximately one minute.

Step 2 : Peel and chop the onion and garlic, adding them to the spices in the skillet.

Step 3 : Add the grated ginger and chopped chili, cooking until they turn golden.

Step 4 : Puree the cashews and incorporate them into the skillet along with the broth.

Step 5 : Then, add the rose water, salt, and sugar.

Step 6 : Mix everything and continue cooking for 15 minutes.

Step 7 : Cut the cheese into cubes and add it to the mixture, which will thicken gradually as it cooks.

Step 8 : Once the desired consistency is achieved, remove from heat.

Step 9 : Finally, serve the dish garnished with chopped fresh cilantro on top.
