Vegetable Korma
Ingredients
500 grams of Cauliflower
500 grams of Broccoli
2 Carrots
1 Onion
2 Garlic cloves
1 Potato
500 milliliters of Coconut milk
30 milliliters of Tomato paste
1 teaspoon of Brown sugar
50 grams of Ground almonds
1 teaspoon of Ground cumin
15 grams of Curry powder
1 tablespoon of Ginger powder
1 teaspoon of Turmeric powder
1 teaspoon of Spicy paprika
1 tablespoon of Salt
Preparation
Step 1 : All vegetables should be washed and dried before peeling and cutting into even pieces.
Step 2 : The stems should be removed from the broccoli and cauliflower.
Step 3 : Garlic cloves should be minced and grated.
Step 4 : Then, all ingredients should be cooked in a pot together with coconut milk, dark sugar, ground almonds, cumin, curry, ginger, and turmeric; spicy paprika can also be added if desired.
Step 5 : Add salt, stir well, and cook on low heat for 2 hours.
Step 6 : Check that the vegetables are cooked and then remove the pot from heat.
Step 7 : Finally, let it rest for a few minutes and serve garnished with toasted almonds and chopped fresh cilantro.
